This recipe is a take on the
60 Piggies baked goodness Banana Chip Muffin.
In case you were wondering why I decided to do this...
1. Nicki's blog was so inspiring
2. The pantry was full of the right stuff
3. I felt a need to celebrate getting over another nasty cold! Tonight was the first time I felt like I actually had any energy to accomplish anything.
4. The pictures posted on 60 piggies were just too gorgeous & if baking up her yummy Banana Muffins could buy me a piece of that happiness, I was all for it.
5. It makes incredibly happy to see my husband loving my cooking/baking.
Here's my version of Banana Bread/Muffin ...had to make loafs, since we don't have muffin tins. :)

Banana Mac Nut and Dark Chocolate Bread/Muffin
3-5 bananas
1 cup brown sugar
1/2 cup granulated sugar
1 1/2 c canola oil
4 eggs
1/4 cup sour cream
1 t vanilla
2 1/2 c flour
2 t baking soda
pinch of salt
1 cup chopped macadamia nuts
3/4 cup chopped Dove Dark Chocolate
Preheat oven to 375 degrees. grease 2 mini loaf pans.
Mash the bananas, mix with sugar, add oil, then eggs, then vanilla & sour cream then add dry ingredients all together. mix well.
Stir in chocolate & mac nuts and ladle into loaf pans. Bake for 45 - 60 minutes. Check to see that your banana creation has cooked through. A good test...hit the center with a butter knife & if it comes out clean, take it out of the oven.

yum! i love your version of this...sour cream and dove dark chocolate...i might have to go make it again! :)
